Traditional Indian Ice Cream (Kulfi)

This quick and easy Kulfi recipe is a traditonal Indian-style ice cream and tastes very different than regular ice cream. Prepared in cone shaped kulfi molds, or popsicle molds - with or without sticks.

 3 slices of white bread - cut into large pieces
 14 fl oz can of sweetened condensed milk
 12 fl oz can of evaporated milk
 250 ml heavy cream or whipping cream
 12 almonds (optional)
 20 unsalted, shelled green pistachios (optional)
 10 strands of saffron or 6 small green cardamom (choti eliachi) - seeds peeled and ground

In a blender, combine all ingredients and blend until all ingredients are thoroughly mixed and nuts are chopped.

Pour in kulfi or popsicle molds. Make sure the nuts don’t settle at the bottom of the blender by continuing to mix as pouring. Close the molds and freeze until fully frozen.

To serve, slide out of the mold by running under water for 5 to 10 seconds. Slide kulfi out onto individual serving bowls. Cut ¾” thick slices at an angle for presentation.
