Spinach Sauce with Indian Cheese (Palak Paneer)

An extremely popular dish, palak paneer is consists of a thick pureed spinach sauce with Indian-style cheese. Tofu can be substituted for paneer to make this dish vegan.

 18 oz spinach - frozen or fresh
 1 hot green pepper (optional)
 1 tbsp purified butter (ghee) or cooking oil
 1 tsp cumin (zeera) seeds
 1 tomato - finely chopped
 1 tbsp ginger - cut into matchsticks
 ½ tsp salt, or to taste
 ½ cup water
 15 cubes of paneer cubed (fried or un-fried) or firm tofu
 ¼ tsp garam masala

Prepare spinach.
• Frozen - Thaw, do not drain water.
• Fresh - Clean, do not discard stems. Wash, blanch, and drain in a colander.

Blend spinach and pepper in a blender until a smooth or slightly chunky puree, as per your liking. Set aside.

Heat ghee or oil in a pot, being careful not to burn. Add cumin and asafetida - roast for few seconds until done.

Add chopped tomato, cook for 5 to 7 minutes crushing with the spoon till tomato is soft.

Add blended spinach, cut ginger, salt, water, mix and cook for about 5 minutes at medium-low heat.

Add fried paneer (unfried paneer should be added a little later - it breaks if cooked for too long) or tofu, mix, and simmer for about 15 minutes. Mix often until the mixture thickens to your preference.

Finally, stir in garam masala and serve.
