This easy Macaroni and Cheese Casserole is a basic roux with cheddar and mozzarella cheeses. Switch up your cuts of pastas and cheeses - you can even add vegetables like broccoli. What is your favorite version?

 4 cups (16 oz.) elbow macaroni or short cut pasta of choice, cooked al dente
 ½ cup butter
 ½ cup all-purpose flour
 salt and pepper to taste
 5 cups milk
 3 cups shredded cheddar cheese, extra sharp
 1 cup shredded mozzarella cheese
 seasoned bread crumbs for sprinkling on top (optional)

Heat oven to 350º F. Make sure to cook pasta according to directions and drain.

In a large saucepan, melt butter over medium heat. Blend in flour, salt and pepper with a wire whisk. Stir constantly until sauce thickens and begins to bubble and boil.

Add cheeses and stir until melted.

In a 3 quart baking dish, stir pasta and cheese sauce until evenly coated. Sprinkle breadcrumbs over the top prior to baking (optional).

Bake 30 minutes or until bubbly. Serve warm.
