Potatoes & Scallions (Subzi)

Finally cut scallion / hara pyaaz gives this potatoes dish color and flavor. It tastes good with plain paratha, puri, kadhi, kidney beans / rajma, black eye beans / lobia or almost anything.

 4 medium potatoes / aalu – boiled, peeled and cut into about ¾-1” pieces.
 12 stalks scallion / hara pyaaz – cleaned, washedMake a stack of handful of cleaned scallion / hara pyaz on a chopping board, hold them with one hand and cut crosswise with the other into about 1/4” thick pieces (both white & green parts).
 2 tbsp cooking oil
 ¼ tsp turmeric / haldi powder
 ¼ tsp chili / mirch powder
 2 tsp coriander / dhania powder
 ¾ tsp mango / aamchoor powder
 ¼ tsp garam masala
 ¾ tsp salt / namak or to taste

Heat oil in pan, add cut scallion / hara pyaz, fry till they shrink and get a little brown.
Add cut potatoes / aalu, turmeric / haldi, chili / mirch, coriander / dhania, mango / aamchoor powder, garam masala, salt / namak and mix.
Reduce the heat a little, spread vegetables in the pan.
Let masala / spices and vegetables roast to golden, for about 10 minutes.
Serve as a side dish with your favorite meal.
