Aloo and hara pyaz subzi features finely cut scallions - giving this potatoes this dish color and flavor. Pairs well with almost any bread, rice, lentil, or raita.

 4 medium potatoes – boiled, peeled, and cut into ¾-1” pieces
 12 scallion (hara pyaz) stalks – cleaned, washed, cut into 1/4” thick pieces (white and green parts)
 2 tbsp cooking oil
 ¼ tsp turmeric (haldi) powder
 ¼ tsp cayenne powder (lal mirch) powder
 2 tsp coriander (dhania) powder
 ¾ tsp mango (amchoor) powder
 ¼ tsp garam masala
 ¾ tsp salt, or to taste

In a pan, heat oil, and add cut scallions. Fry till they shrink and get a little brown.

Add cut potatoes, turmeric, cayenne, coriander, mango powder, garam masala, salt - then mix. Reduce the heat, spread vegetables evenly across the pan.

Let spices and vegetables roast until golden - about 10 minutes.
