This refreshing raita features plain yogurt mixed with boiled potatoes, red onion, fresh mint and spices.

 1 cup plain yogurt - whipped and thinned with milk or water as needed
 ½ cup potato - boiled, peeled and cut into small pieces
 ¼ cup red onion - peeled and chopped
 ¼ tsp salt, or to taste
  tsp red chile powder (lal mirch)
 ¼ tsp roasted cumin powder (zeera)
 1 tbsp fresh mint leaves - washed and chopped, or ½-teaspoon mint powder

Mix all the above ingredients, cover and refrigerate till ready to serve.
