Nana’s Blueberry Buckle Cake

Nana's Blueberry Buckle Cake is similar to a coffee cake with blueberries throughout the cake and soft cinnamon crumb topping. Super simple and great for breakfast or brunch.

Yields1 Serving

Mix In Order
 ¾ cup sugar
 2 cups flour
 2 tsp baking powder
 ¼ cup oil
 1 egg
 ½ cup milk
 ½ tsp salt
 2 cups blueberries, fresh or frozen
Crumb Topping
 ½ cup sugar
  cup flour
 1 tsp ground cinnamon
 3 tbsp butter, cold

Preheat oven to 375º F.

Mix all cake ingredients in order. Batter will be thick. Pour into greased 9x9 pan.

In a separate bowl, combine all topping ingredients with a pastry blender. Sprinkle on top of cake batter.

Cook for approximately 1 hour or when a toothpick inserted comes out clean.
