Simple and cute single-serve mini cheesecakes with an easy vanilla wafer-style cookie crust. Add your favorite prepared fruit topping or pie filling. Great for parties.
Preheat oven to 350º F.
Blend cream cheese, sugar, and vanilla.
Add sour cream and mix well.
Add eggs, one at a time, until just blended after each addition.
Lay out foil baking liners on a cookie sheet. Place one vanilla wafer-style cookie on the bottom of each liner.
Fill each cup approximately half way with cheesecake mixture or until evenly distributed.
Bake until cheesecake begin to crack. Cool and refrigerate until ready to serve.
Optional: Place a spoonful of the fruit topping on each cooled mini cheesecake.
