This easy macaroni and cheese casserole is a basic roux with milk and cheddar cheese. Switch up your cuts of pastas and cheese - you can even add vegetables like broccoli. What is your favorite version?
Heat oven to 350º F. Make sure to cook pasta according to directions and drain.
In a large saucepan, melt butter over medium heat. Blend in flour, salt and pepper with a wire whisk. Stir constantly until sauce thickens and begins to bubble and boil.
Add cheeses and stir until melted.
In a 3 quart baking dish, stir pasta and cheese sauce until evenly coated. Sprinkle breadcrumbs over the top prior to baking (optional).
Bake 30 minutes or until bubbly. Serve warm.
