 2 cups thick flattened rice (poha)
 2 cups green peas
 1 tbsp cooking oil
 ¼ tsp turmeric (haldi) powder
 ¾ tsp salt, or to taste
 2 fresh green hot peppers - jalapeños or similarCut into small pieces
 2 tbsp water
 1 fresh lemons or limesCut into wedges
VARIATIONS - Substitute for green peas
 corn kernels
 potatoesBoiled, peeled, and cubed small
 mixed vegetables

Place flattened rice in a colander or sieve and wash under running water, gently mixing by hand to make sure everything is moistened. Set aside.

In 5-10 minutes, repeat the process so flattened rice is soft and moist, but not broken.

Heat oil and roast mustard seeds and sweet neem leaves in a pan. Cover with a lid until the seeds pop.

Add turmeric, cayenne powder, and salt. Mix, making sure not to burn. Mix in vegetables and hot peppers.

Add about 2 tbsp water, cover the pan and reduce the heat. Cook in steam for about 5 minutes or until corn is cooked, mixing once or twice.

Add the moistened flattened rice (poha) and fold in gently. Reduce the heat to low, cover, and cook for another 10 minutes, mixing once or twice.

Transfer to a serving bowl and sprinkle with chopped cilantro. Serve with cut lemons or limes.
