Cabbage, Potatoes & Peas (Patta Gobhi, Aloo & Matar Sabzi)

Patta gobhi, aloo and matar sabzi is an easy and quick 10-minute vegetable dish of mostly cabbage with potatoes and/or peas.

 ½ small cabbageQuartered, cored/stemmed, and cut into ½” thick strips
 1 small onionCut in half and slice lengthwise
 1 medium potatoPeeled and cut into wedges
 1 cup green peas - fresh or frozen
 1 tbsp fresh gingerCut into thin ¾” long matchsticks.
 2 tbsp cooking oil
 ¼ tsp turmeric (haldi) powder
 2 tsp coriander (dhania) powder
 ¾ tsp salt, or to taste
 ¼ tsp garam masala

Heat the oil in a pan and cook onions until they are golden brown.

Add turmeric, coriander, cayenne powder and heat for a few seconds, being careful not to burn.

Add the cut cabbage, potato, ginger, and salt. Mix well and cover with a lid, reducing the heat to medium-low. Cook in steam until the potatoes are almost done - approximately 20 minutes, stirring occasionally.

Add the green peas, mix, cover, and cook for another 10 minutes.

Add mango powder, garam masala, and mix. Cook uncovered for 2-3 minutes.
