Heat the oil in a pan and cook onions until they are golden brown.
Add turmeric, coriander, cayenne powder and heat for a few seconds, being careful not to burn.
Add the cut cabbage, potato, ginger, and salt. Mix well and cover with a lid, reducing the heat to medium-low. Cook in steam until the potatoes are almost done - approximately 20 minutes, stirring occasionally.
Add the green peas, mix, cover, and cook for another 10 minutes.
Add mango powder, garam masala, and mix. Cook uncovered for 2-3 minutes.
