Bombay Bread & Vegetables (Pav Bhaji)

This common street food, Bombay bread and vegetables (pav bhaji), consists of special roll called pav that you use to scoop to eat the spicy liquid mixture of coarsely mashed vegetables (bhaji).

 2 tbsp cooking oil
 ½ cup onion - chopped
 ½ cup green bell pepper - cored and chopped
 1 cup tomatoes - chopped
 2 cups potatoes - boiled, peeled and chopped
 ½ cup peas
 salt, to taste
 ½ cup water, or more as needed
 1 ½ oz butter (or oil if vegan)
 1 tsp cumin seed (zeera)
 6 garlic cloves – peeled, grated/ground
 4 tsp pav bhaji masala
 ¾ cup water, or more as needed
 2 tbsp fresh cilantro (dhania) - chopped
 1 lime or lemon - cut into wedges
 1 red onion - chopped
 bread or rolls

Heat oil in a frying pan. Add onions and sauté for few minutes.

Add bell peppers and cook for a few minutes until a little soft.

Add chopped tomatoes, mix, and cook covered for about 8-10 minutes until the tomatoes become soft.

Add chopped potatoes, peas, and any additional vegetables you like.

Add salt and water, and mix. Cover the pan with a lid and cook for 10-15 minutes until the vegetables are cooked and soft. Remove from heat, mash coarsely with a potato masher, and set aside.

Heat 1 oz of butter in a frying pan, being careful not to burn it. Add cumin seed (zeera) and roast for 10 to 15 seconds, until darkened.

Add garlic, pav bhaji masala, and mashed vegetables - mixing between each addition.

Add ¾ cup of water, mix and let the mixture simmer until the water evaporates and vegetables thickens to your desired consistency.

Sprinkle chopped fresh cilantro (dhania) and small pieces of the remaining butter. Serve with toasted bread, chopped red onions, and lime or lemon wedges.
