Preheat oven to 350º F. Grease or line baking dish of choice:
• 12 Jumbo Muffins
• 24 Standard Muffins
Cream butter and sugar. Add eggs and banana and mix well.
Add flour and baking soda and gently mix until combined. Fold in optional ingredients at this time.
Pour into greased or lined baking dish. Sprinkle optional ingredients on top, if desired.
Bake until toothpick comes out clean.

• 24 Standard Muffins - 20 to 25 Minutes
Immediately remove from oven and cool on the counter.
Once completely cooled, store in zipper bag to maintain freshness. Can be frozen.
